Versatile and delicious, pure and natural; honey is one of nature's marvels. In this country almost three quarters of all honey is eaten at breakfast time, mostly on toast or coated on cereals. But we're not the only nation who likes to spread a little sunshine in the morning; honey comes from all over the world - and so do these breakfast ideas:

In the USA, a favourite breakfast time treat is to drizzle clear, sweet American clover honey over crispy bacon on muffins. Not everyone's taste perhaps, but maybe the exotic Chinese indulgence of delicately flavoured honey with lychees will tickle your taste buds. In China it is also common to sweeten tea with tangy lime blossom honey. 

For truly authentic Australian bush tucker try an Aussie favourite - Damper spread with eucalyptus honey for a real taste of the 'bush'. Damper is a bread first made by the early settlers. Mix together 2 cups self-raising flour, a pinch of salt, 2 teaspoons of sugar, 3 tablespoons of butter and 1 cup of milk to make a soft dough. Then bake either over an open fire or in a more conventional oven for 40 minutes. Serve still warm from the oven spread with butter and honey to ensure you have a G'day! 

More traditional is the French habit of croissants smothered in richly scented lavender or rosemary honey. Or for an insulating breakfast to beat the Highland weather, the Scots pour strong, fortifying heather honey on their porridge.

For the health conscious, the Greek preference of wild thyme honey in yoghurt is also a favourite here in Britain. Add fruit or muesli for a more filling breakfast bowl. Orange blossom honey will bring out the Mediterranean in you. Try spreading it on a piping hot 'tostado' accompanied by freshly squeezed orange juice like the Spanish serve. 

The Mexicans know about mañana in the sunshine. With Mexican wildflower honey poured over hotcakes you can't fail to start the day with a smile on your face.
